Ingredients

  • 2 chicken breasts (appx 1.5 lb
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can cannellini or pinto beans, drained
  • Seasoning packet from Urban Accents Multi-Cooker Creamy Chicken Chili
  • 2 cups water
  • 1 block cream cheese, cut into 8 pieces

Directions

  1. Place all ingredients except cream cheese into the pot of a multi-cooker. Stir to combine and submerge. Add cream cheese on top.
  2. Seal and cook on high pressure for 20 minutes. (Allow pressure to release naturally for 5 minutes before releasing the valve.)
  3. Carefully remove chicken to a large bowl, and use two forks to shred into bite sized pieces. Return to the pot and stir to combine.
  4. Serve immediately with optional garnish like cilantro, lime wedges, avocado slices, and tortilla chips.
  5. Add a pop of summer sweetness with a 12 oz package frozen corn kernels added when filling the multi-cooker!
