- Preheat oven to 400°F. Place 10-inch cast iron pan in oven to heat.
- Whisk together eggs and water, and add crepe mix. Mix until there are no lumps, allow to rest 10 minutes
- Remove cast iron pan from oven and carefully place butter in pan. Quickly swirl around to cover pan, then add batter. Return to oven immediately.
- Bake for 20 – 25 minutes, or until top is set and lightly browned. Garnish with powdered sugar and topping of your choice.
