Preheat oven to 350°F and line a baking sheet with parchment paper.
Cut the bagels into small, bite-size cubes, about 1”x1”. Toss with the olive oil and place on the baking sheet. Spread out so that none of the pieces are touching.
Bake for 15 minutes, tossing halfway through, until they are browned and crisp. Remove from oven and let cool.
Place the bagel pieces into a large bowl and add the remaining salad ingredients. Add ½ cup Everything dressing and salt and pepper to taste. Allow it to sit for 15 minutes before serving. Add additional dressing as desired.
