Put the lime (and watermelon) in the coconut and eat em’ all up! 🥥🍉 Watermelon jam filled pop tarts with coconut icing with toasted coconut flakes, lime zest, Tajin sprinkle, and watermelon garnish. A truly refreshing summer tart! For me, jam is notoriously difficult to perfect with a first time recipe so I opted to test this new tart flavor by using the best watermelon jam I could find. You didn’t disappoint stonewallkitchen and adding the tajinusa gave the flavor an extra pop! Thanks for the recipe inspiration abbeyskitchen 👌

The big doe eyes work wonders when paired with “can we spend time together? Maybe bake…brownies??” 🍒 We topped with homemade vanilla whipped cream and a cherry on top.
