Combine the broccoli, onion, carrot and tomatoes in a large bowl with the Sesame Garlic Veggie Roaster seasoning and 1 tablespoon Toasted Sesame Oil. Toss to coat.
Heat a wok pan or large skillet on high heat and add remaining Toasted Sesame Oil. Add veggies and saute for 2 – 3 minutes, or until just tender. Add rice wine vinegar and cook for 30 seconds. Whisk together vegetable stock and cornstarch, then add to pan. Allow to bubble and simmer for about 1 minute, or until sauce is incorporated and thickened.
To plate, divide warm white rice between two plates and spoon vegetables along with sauce over the top of the rice. Garnish with scallions and enjoy!
