Preheat oven to 400°F. Slice the cauliflower into 1/2 inch “steaks” and place in a single layer on a rimmed baking sheet. Mix together olive oil, melted butter and cauliflower seasoning. Brush onto both sides of the cauliflower steaks. Roast for 20 minutes or until tender, turning halfway through. Adapt this recipe for potatoes and other hearty vegetables.
